1 small yellow onion, diced
1 orange bell pepper, diced
1/2 pound Italian sausage
6 slices bacon
4 ounces goat cheese
8 ounces shredded cheddar cheese
2 yellow potatoes, sliced or shredded very thin
1 tablespoon garlic powder
1 tablespoon smoked paprika
Salt and Pepper to taste
Spread sliced/shredded potatoes on the bottom of a lightly greased baking dish (9X13 inches). Bake at 400 degrees for 25-40 minutes or until browned slightly.
Brown sausage in a frying pan. Once meat is browned, add veggies into frying pan and saute for 5-7 minutes.
In a medium mixing bowl, combine eggs, paprika, garlic powder, salt, pepper, and half of your shredded cheddar cheese. Mix thoroughly.
Spread meat and veggies evenly on top of cooked potatoes in baking dish. Pour over egg mixture and spread this evenly in dish. Place chunks of goat cheese all over within the casserole. Sprinkle with a dash more of paprika.
Bake at 350 degrees for 30-40 minutes or until eggs are cooked through.
While casserole is baking, cut your bacon into small pieces and cook.
Once casserole is baked sprinkle the top with the crunchy bacon.
