Classic Chicken Parmesan

2 chicken breasts (boneless, skinless)
2 tablespoons fresh basil leaves, chopped
8 oz fresh mozzarella
4 oz freshly shredded Parmesan cheese
1/2 cup bread crumbs
2 cups prepared tomato sauce
1/2 pound of uncooked pasta (typically spaghetti or angel hair)
1 tablespoon olive oil
1 teaspoon garlic powder, or 1 finely minced garlic clove
2 eggs
Salt and pepper to taste


Prep your chicken by butterflying it (cutting long-ways horizontally down the center, but not all the way through). Season on both sides with salt and pepper to taste.

Prep your other ingredients: pour breadcrumbs into shallow dish and season with salt, pepper, and garlic. Add a pinch of Parmesan cheese into the bread crumbs for a more delicious crisp! Place your eggs into shallow dish and beat them until combined. Season with salt and pepper.

Spread a thin layer of your tomato sauce to the bottom of a 9 X 13 baking dish.

Preheat your oven to 350 degrees, Fahrenheit.

Coat your chicken breasts in the egg mixture first, shake off any excess egg, then place into the bread crumbs and thoroughly coat the chicken in the bread crumbs. Shake off any excess bread crumbs and set aside until you’re ready to cook.

Heat up your olive oil in a skillet on medium high heat. Once hot, add both pieces of chicken and brown on both sides. This should take 2-3 minutes per side. Once browned, place both pieces of chicken in your baking dish.

Take half of your remaining Parmesan and sprinkle it over the chicken breasts. Take about 1/2 cup of your tomato sauce and spread it over the chicken breasts. Sprinkle the rest of your Parmesan onto the top of that. Now, place basil leaves on top in an even layer. Cover that with sliced Mozzarella.

Bake chicken at 350 degrees for 20-25 minutes, or until cooked through and Mozzarella is completely melted. For a crispier cheese texture on top, you can broil this, once cooked, for about 5 minutes.

While the chicken is baking, prepare pasta according to the package instructions. Also, heat up the remaining tomato sauce on a low heat with the lid on, stirring occasionally.

Once everything is done, drain pasta, and combine it with the sauce. Serve on a plate next to the melty but still crispy chicken! Add more Parmesan cheese to the top if you so desire!
